Not the classic. Casa Bosques makes the caramel from organic Medjool dates and cashews, macerated for twenty-four hours, then folds it into 74% heirloom Mexican dark chocolate in Mexico City. Sticky and deep, no dairy, without the cloying sweetness of stovetop caramel.

The maker

Casa Bosques

Mexico City, Mexico

Casa Bosques started as a bookstore in Roma Norte, Mexico City. Rafael Prieto added chocolate, and it is now made between Mexico City and Brooklyn.

Two ingredients. Heirloom cacao and organic cane sugar, with no emulsifier and no vanilla to round off the edges. The beans come from small ranches in Mexico and elsewhere in Latin America, including a rare Criollo from a family farm in Chiapas.

The wrappers are an artist series. Lawrence Weiner did one.
